The complex, polymeric flavonoid pigments that give black tea its deep reddish-brown colour, full flavour, and body. Thearubigins arise from extensive oxidation and polymerization of catechins during fermentation, complementing the brighter theaflavins; together the two groups define black-tea liquor character.
