Terrines
Foods, particularly pâtés, which are cooked and served in earthenware tureens (or terrines). A pâté made in this way is also referred to as pâté en terrine. Terrines range from coarse country pâtés to layered vegetable or seafood terrines, all characterized by slow, gentle cooking in the vessel — often in a water bath — which yields a dense, sliceable texture. Because they are typically served cold and receive no further cooking, terrines demand rigorous hygiene: validated heat processes reaching safe core temperatures, rapid chilling, and strict cold-chain control to prevent growth of Listeria monocytogenes and Clostridium botulinum during extended refrigerated storage.
