Sweet peppers
Sweet peppers are the mild, non-pungent fruits of Capsicum annuum, encompassing bell peppers in green, red, yellow, and orange, along with pimento or pimiento peppers. Unlike chillies they contain negligible capsaicin, so their flavour is sweet and fruity rather than hot. They are eaten raw in salads, roasted, stuffed, or cooked into countless dishes, and red ripe types are rich in vitamin C and carotenoids. Their thick walls and hollow cavity make them ideal for stuffing, and careful postharvest handling preserves their crisp texture and bright colour.
