Sugar cones
Sugar cones are ice cream cones formulated to have a particularly crisp texture, made from a sweetened wafer batter baked or moulded into the familiar pointed shape. Their higher sugar content gives a caramelized crunch and a sturdier structure than plain wafer cones, helping them stay crisp against melting ice cream. They must be baked evenly to avoid soggy spots and packed to protect their fragility, since a stale or broken cone ruins the eating experience. The contrast of cold creamy ice cream with crisp sweet cone is one of dessert’s classic pairings.
