Sugar beet cossettes

Sugar beet cossettes are thin slices cut from sugar beets at the start of sugar processing, shaped like crinkle-cut chips to maximize surface area. They pass through hot-water diffusers where the sugar is extracted into juice, leaving exhausted pulp that is pressed and dried for animal feed. Uniform cossette cutting is critical: slices too thick extract poorly, while fines clog the diffuser. This humble slicing step sets the efficiency of the entire beet-sugar factory, determining how completely the root’s sugar is recovered.
