Spiny lobsters
Spiny lobsters is another name for crawfish, the clawless marine lobsters of the genera Palinurus and Panulirus, clawless lobsters distinguished by their long, spiny antennae. They are prized for sweet, firm tail meat and are sold live, frozen, or as tails for the premium seafood market. Like all crustaceans they are a major allergen requiring label declaration, and they must be kept alive or properly chilled until cooking, since their flesh spoils rapidly after death. Proper handling from trap to plate is what protects both quality and safety.
