Sodium cyclamate

Sodium cyclamate belongs to the cyclamate family of artificial sweeteners, roughly 30 times sweeter than sucrose. It forms white crystals that dissolve readily in water and withstand baking temperatures, which suits it to cooked and baked applications. It has a pleasant flavour profile and is thus often used in combination with saccharin, a molecule sweeter than sodium cyclamate but prone to a bitter aftertaste that cyclamate helps mask. Also known as sodium cyclohexylsulfamate and sucaryl sodium, its regulatory status varies sharply by market: it is banned in the United States but permitted in many other countries, so manufacturers must always check local approval before use.
