Smoothies
Smoothies are thick, smooth-textured beverages made by blending fruits with yoghurt, milk, ice, ice cream, or frozen yoghurt into a pourable drink. They are consumed for their fresh flavour and perceived health value, but from a food-safety view they are a demanding product: they are typically unpasteurized, nutrient-rich, and high in water activity, which lets yeasts, moulds, and pathogens grow quickly. Commercial producers therefore rely on acidification, strict refrigeration, and sometimes high-pressure processing or pasteurization to control spoilage and pathogens, and the finished drinks have a short shelf life. Hygiene of blenders, fresh produce washing, and cold-chain discipline are the everyday controls that keep them safe.
