Slendid

Slendid is a pectin-based fat substitute developed for use in low-fat foods. Pectin, the soluble fibre extracted from fruit, forms soft gels that imitate some of the lubricity and creamy mouthfeel that fat normally provides, so manufacturers can cut calories and fat while keeping a product feeling indulgent. Like any fat replacer, Slendid has to be matched to the application, since its behaviour under heat, in frozen storage, and alongside other hydrocolloids affects texture, and its presence must be declared on the label so consumers and regulators can see how the reduced-fat claim is achieved. It belongs to the wider family of carbohydrate-based fat mimetics used across dressings, desserts, and dairy-style products.
