Sherry
Sherry is a fortified wine made in the defined region around Jerez de la Frontera in Spain. Main styles include Fino, Oloroso, Amontillado, Manzanilla, and Palo Cortado, aged by the solera system of sequential blending across vintages. Some styles develop under flor, a layer of yeast growing on the wine’s surface, which imparts a distinctive nutty character. It ranges from bone-dry to lusciously sweet. The solera system blends vintages for consistency. It is a unique ageing tradition. Each style has its devoted fans.
