Sevruga
Sevruga is a species of sturgeon (Acipenser stellatus) from the Caspian Sea, the smallest of the commercially exploited sturgeons. Its roes are processed into sevruga caviar, prized for small, delicate grains. Like all sturgeon products, it comes from heavily regulated fisheries, since wild sturgeon populations have been severely depleted. Aquaculture now supplies much of the market, easing pressure on wild stocks. Its pearls are small but intensely flavoured. Conservation efforts aim to secure its future. Farmed caviar now leads the market.
