Sea urchins

Sea urchins, also known as echinoids, are any of around 700 species of marine invertebrates in the phylum Echinodermata, with worldwide distribution. They generally have rounded, hard, calcareous shells and prominent spines. Their gonads are a highly valued delicacy harvested from many species. Harvesting must be managed sustainably, and because urchins are eaten raw, they must come from clean, monitored waters. Divers harvest them by hand in many fisheries. Their striking appearance fascinates tide-pool visitors. Sustainable harvest keeps the fishery viable.
