Salsify
Salsify is the name of two Compositae plants; white salsify is Tragopogon porrifolius; its white roots are boiled and served with melted butter, cream, or cheese, or added to soups and stews, and the leaves are also eaten in salads. Scorzonera (Scorzonera hispanica), or black salsify, has black skin over white flesh and cooks use it like white salsify. Both are nicknamed oyster plant for their faint oyster-like flavour. Their delicate flavour rewards simple preparation, and their inulin content adds prebiotic interest.
