Rollmops
Rollmops are marinated herring fillets rolled around pickled vegetables or onion slices and pinned with small wooden sticks or cloves. They are packed in brines and vinegar and may also be packed with spices, mayonnaise, or other condiments. Marketed as semi-preserved products, often with added preservatives, they are ready to eat. Their safety rests on the acidity of the marinade, continuous refrigeration, and hygienic preparation, since they receive no heat treatment after packing. They keep for several weeks chilled, and the sharp marinade complements rye bread and potatoes.
