Restaurants are commercial catering establishments where foods and beverages are prepared and served, ranging from fine-dining rooms to workplace and school canteens that feed large numbers quickly, often by self-service from a central point. From a food-safety perspective they are high-stakes environments: large volumes of food, many handlers, extensive preparation steps, and ready-to-eat dishes served without further cooking demand strict hygiene, correct cooking and holding temperatures, separation of raw and cooked foods, and trained staff. Inspection regimes and food-hygiene ratings exist precisely because restaurant failures can sicken many people at once.
