A microbial polysaccharide spun from sugar by the fungus Aureobasidium pullulans: a water-soluble, linear glucan built mostly from maltotriose units joined by alpha-1,6 linkages. Its talent is film formation, casting clear, flexible sheets with excellent oxygen barrier that serve as edible coatings and capsule shells, and it can replace starch in dietetic formulations. Heat-stable and neutral in taste, it suits applications where other gums would cloud or weaken the product, and toxicological review supports its food uses. It is also cast into thin films for breath-freshening strips and supplement coatings.
