Propanal
A three-carbon aldehyde also called propionaldehyde, a clear, volatile liquid with the sharp reactivity typical of its class. It reduces cleanly to propanol and oxidizes to propanoic acid, textbook transformations of short-chain aldehydes. In foods it shows up as a trace volatile shaping aroma, while elevated levels can flag lipid oxidation or process deviations. Like its aldehyde cousins it polymerizes and reacts readily, so handling demands the usual precautions for flammable, irritating organics, and its use is confined to industrial and analytical contexts.
