Pomfret

Any of several marine fish species in the family Bramidae, of worldwide distribution, with the species prized as food fish including Brama brama, the pomfret or black sea bream, and B. japonica, the Pacific pomfret, Taractichthys longipinnis, and Parastromateus niger, the black pomfret. The flesh is typically tender, rich, and sweet, and the fish are sold fresh, frozen, and canned, and also salted in India. In South Asian markets black pomfret commands premium prices. Quality depends on rapid chilling after catch, and buyers should confirm species, since the name is sometimes stretched to cover cheaper substitutes.
