Pollock
A common name for the cod relative also called coalfish or saithe, Pollachius virens, fished in northern Atlantic waters for fillets, fish fingers, surimi, and salted products. It is a lean, affordable whitefish with firm flesh and mild flavor, valued as an economical alternative to cod and haddock. Quality depends on rapid onboard chilling and hygienic processing to control spoilage bacteria. Mislabeling pollock as premium cod or haddock is a known seafood fraud, so species verification through documentation and DNA testing matters in the supply chain. Honest labeling protects both consumers and the honest fishers who catch it.
