Pistachio nuts

The edible green kernels of Pistacia vera drupes, eaten as salted snacks and used in confectionery, baking, ice cream, and Middle Eastern sweets. They supply protein, unsaturated fats, fiber, and antioxidants, but they are a major tree-nut allergen that must be declared on food labels wherever they are used. Pistachios are also prone to aflatoxin contamination from Aspergillus molds in the orchard and during storage, so shipments face strict regulatory sampling and testing before sale. Processors sort, roast, and package under hygienic conditions to control both microbial safety and the rancidity that the kernels’ high fat content invites.
