Phytic acid
Phytic acid is the hexaphosphoric acid ester of inositol, present mainly in cereal grains, nuts, and legumes, where it serves as the principal storage form of phosphorus in seeds. In human nutrition it acts as an antinutritional factor because it chelates minerals such as iron, zinc, and calcium, reducing their absorption from the intestine. Food processing methods including soaking, sprouting, fermentation, and enzymatic treatment with phytases break down phytic acid and improve mineral bioavailability. In food technology, phytic acid is also studied for its antioxidant and preservative potential. Managing its levels through processing is important for maximizing the nutritional value of whole-grain and legume-based diets.
