Photobacterium
Photobacterium is a genus of Gram-negative, facultatively anaerobic bacteria, coccoid to rod-shaped, within the Vibrionaceae family. Members inhabit seawater, the guts of fish and marine animals, and the light organs of certain fish and cephalopods, where some species generate bioluminescence. In seafood quality, Photobacterium phosphoreum is a feared spoiler of chilled fish, especially under modified atmospheres, growing at refrigeration temperatures and producing pungent off-odors. Its rise signals temperature abuse in the cold chain. Processors counter it with strict chilling, hygienic handling, and packaging choices, while its detection helps auditors pinpoint where the seafood chain failed.
