Phloroglucinol
Phloroglucinol is a phenol with the systematic name 1,3,5-benzenetriol, a benzene ring bearing three hydroxyl groups. It is used in the manufacture of pigments and plastics, and in analytical chemistry as a reagent for detecting certain carbohydrates and lignin. In food-related analysis, phloroglucinol reactions help identify pentoses and assess plant material composition. Although it is not itself a food ingredient, its chemistry illustrates the reactivity of polyhydric phenols that underlie many plant-derived colorants and tannins.
