Phenylacetic acid

Phenylacetic acid is a volatile aromatic organic acid used in flavorings for foods such as bakery goods, ice cream, and sugar confectionery. It contributes a sweet, honey-like floral note and also serves as a substrate for synthesizing other flavor compounds. Alternatively called alpha-toluic acid or benzeneacetic acid, it occurs naturally in some fruits and fermented products. In flavor manufacturing, its purity and concentration are controlled to deliver consistent sensory effects, and it is handled under good manufacturing practice as a food flavoring ingredient. Understanding its aroma contribution helps flavorists build balanced profiles, while regulatory frameworks govern its permitted use levels in different food categories.
