Peppercorns

Peppercorns are the intact dried berries of Piper nigrum or of Schinus molle, used whole or ground as culinary spices that lend foods a warm, aromatic character. Black peppercorns are dried nearly ripe berries, white peppercorns are the same berries with the outer layer removed, and pink or red peppercorns come from Schinus molle. In food processing and foodservice, peppercorns are ground fresh to preserve volatile aroma compounds, especially piperine, and they season meats, sauces, and snacks worldwide. Quality grading considers berry size, density, and freedom from defects and adulterants. Because whole spices retain aroma longer than ground forms, peppercorns are preferred where maximum freshness of flavor is required.
