Pecorino Sardo cheese is a hard cheese made on Sardinia from ewe milk, belonging to the broader pecorino family of Italian sheep-milk cheeses. Its rind matures from pale straw to dark brown, enclosing an interior that is white to pale yellow with small eyes. The flavor is salty with a fruity tang that strengthens as ripening progresses. In Sardinian cheesemaking, curd cutting, molding, salting, and aging conditions create its firm texture and distinctive taste.
