Pastiness
Pastiness is the sensory property describing how strongly a food’s consistency is perceived as pasty or thick in the mouth, a texture attribute assessed during descriptive sensory profiling. Assessors judge it in products such as porridges, purees, sauces, baby foods, and doughs, rating the degree to which the mass coats the palate and resists flow. Excessive pastiness signals overcooked starch, too little moisture, or over-thickening, while too little suggests a thin, watery product lacking body, so manufacturers target an optimal range for each product. Instrumental viscosity measurements complement panel scores, and formulation adjustments to starch type, hydrocolloid level, and solids content bring pastiness into the acceptable window.
