Nerol
Nerol is a fragrant monoterpene alcohol that occurs as a volatile in a wide range of plant essential oils. It plays a notable part in the scent of grapes and wines, lending fresh, rosy-citrus notes, and it is also found in hops, citrus fruits, and herbs. Chemically it is the cis isomer of geraniol, and together with other monoterpene alcohols it builds the varietal character of aromatic wines such as Muscat and Riesling. Levels shift with grape variety, ripeness, and winemaking choices, so analysts monitor these compounds to authenticate varietal wines and to guide harvest timing and fermentation decisions that shape aroma intensity.
