Mustard
Mustard is the pungent condiment prepared from the ground seeds of mustard plants, used as a table seasoning and as an ingredient in dressings, marinades, sauces, and processed meats, often served alongside products such as tomato ketchup. Its characteristic heat comes from allyl isothiocyanate and related compounds, released when the crushed seeds contact liquid. Prepared mustards range from mild yellow American styles to hot Dijon and whole-grain European types, depending on seed variety and the liquid used. Commercial manufacture standardizes pungency, grind, texture, and microbiological stability, and colour and flavour must remain consistent through shelf life.
