Moroccan smen is an alternative name for smen, the traditional fermented, clarified butter central to North African cooking. Butter is salted, sometimes herbed or spiced, packed into jars, and aged for months or even years, developing a pungent, cheesy depth prized in tagines, couscous, and pastries. The long aging, high salt content, and removal of water create a hostile environment for pathogens, making it shelf-stable at room temperature.
