Millet oils
Millet oils are the vegetable oils extracted from millet grains by pressing or solvent extraction. They are minor specialty oils, valued for their unsaturated fatty acid profile, vitamin E, phytosterols, and carotenoids, and are used in cooking and traditional preparations in millet-growing regions. Because the grains are small and the oil content modest, extraction is less economical than for major oilseeds, keeping production artisanal or regional. Quality control focuses on freshness and refining, since the oils’ unsaturation makes them prone to oxidation and off-flavors without proper processing, deodorization, and storage away from heat, light, and air.
