Micrococcus is a genus of Gram-positive, aerobic, spherical bacteria common in soil, dust, water, and on human skin. In foods they are generally harmless but can act as spoilage organisms in refrigerated meats, poultry, and dairy products when hygiene lapses allow them to multiply. Some species contribute positively to fermented sausages, aiding nitrate reduction, color formation, and flavor development alongside staphylococci. Their presence in finished products usually signals environmental or handling contamination rather than a direct health hazard, and processors control them through sanitation, proper chilling, and limiting the time raw materials spend at permissive temperatures.
