Melons are the sweet, high-moisture fruits of Cucumis melo, including cantaloupe, honeydew, and muskmelon varieties grown widely in warm climates and prized for their aromatic, juicy flesh. The flesh is mostly water, with natural sugars and useful amounts of vitamin C and beta-carotene in orange-fleshed types. From a food-safety standpoint, cut melon is a notable risk food: pathogens such as Listeria monocytogenes and Salmonella can transfer from the rind to the flesh during slicing, so industry guidance calls for thorough rind washing, clean cutting equipment, rapid chilling, and short refrigerated shelf life for fresh-cut melon. Whole melons also require sound storage and handling, since bruising and warm holding accelerate spoilage and flavor loss.
