MRM — mechanically recovered meat — is the meat stripped from bones with separation machinery. Machine recovery separates more efficiently than hand boning, winning extra meat per carcass in less time: in many systems meat and bone are forced against perforated plates or cylinders, the meat passing through while bone is rejected as waste. The recovered material’s composition varies with the method but generally combines comminuted meat, bone marrow, collagen, bone and fat; bone content is tightly controlled, with calcium limits applied. BSE-related specified-risk-material rules restrict MRM from bovine vertebral column in many jurisdictions, and permitted uses require declaration.
