Meat patties

Patties are round, flat cakes of comminuted meat — made from minced meat, or reconstituted from sources such as mechanically recovered meat, with some varieties incorporating meat extenders; beef, chicken and turkey are the common types. Forming standardises portion size for retail and foodservice, but comminution spreads bacteria throughout the product, so patties need cooking to a validated safe core temperature (at least 70°C) — undercooked beef burgers carry the well-documented E. coli O157:H7 risk, a critical control point. Fat content, binders and extenders must be declared, and chilled or frozen distribution keeps the product safe to the point of sale.
