Maribo cheese
Maribo is a Danish semi-hard cheese made from pasteurised cow’s milk, similar in appearance to Gouda: a yellow wax coating protects a firm, sliceable interior containing many small eyes formed by starter-culture gas production. It is sometimes flavoured with caraway seeds for a spiced variant. Produced by standard semi-hard technology — curdling, cutting, scalding, pressing, brining and ripening under controlled temperature and humidity — it develops a mild, buttery flavour over several weeks to months. Pasteurisation of the milk, hygienic curd handling and wax integrity protect against Listeria and mould defects; the cheese is kept refrigerated, and the waxed format gives a long shelf life for retail and foodservice slicing.
