Luncheon meat
Luncheon meat is a cooked meat product prepared from chopped pork, ham and/or beef, available canned or sliced and sold in vacuum packaging. The meat is comminuted with curing salts, binders, seasonings and water, then fully cooked during manufacture — typically retorted in cans for shelf stability or cooked, sliced and vacuum-packed for chilled sale — and is eaten cold without further cooking. Because it is a ready-to-eat product, post-cooking hygiene is critical: contamination after the heat step can introduce Listeria monocytogenes, so plants enforce strict separation of raw and cooked areas, validated thermal processes, intact packaging and continuous refrigeration of chilled formats. Composition, meat content and labelling follow processed-meat standards.
