L-Glutamate oxidases
Specialized enzymes, designated EC 1.4.3.11, that convert L-glutamic acid into 2-oxoglutaric acid, also known as alpha-ketoglutarate, while producing hydrogen peroxide as a measurable byproduct. Their strict specificity for the L-form of glutamate makes them ideal analytical reagents: coupled with peroxide-detecting electrodes or color systems, they power biosensors that quantify glutamate and monosodium glutamate levels in soups, sauces, and seasonings. Combined with additional enzymes, the same platform can detect aspartame and aspartic acid, helping laboratories verify sweetener content and label accuracy. Researchers have also explored them for identifying certain plant neurotoxins and for producing keto acids from amino acid mixtures. Sourced from selected bacteria and now available in recombinant form, they give food analysts a fast alternative to chromatographic glutamate testing.
