Knackwurst is a cooked, smoked German sausage made from coarsely textured pork, beef and veal — similar in base emulsion to frankfurters and bologna but distinguished by added garlic, which gives its stronger, savoury flavour, and traditionally stuffed into sheep casings that produce the signature ‘knack’ snap. Though sold fully cooked, it is reheated before eating, typically simmered gently (not boiled hard, which splits casings) and served with sauerkraut, mustard and bread, or like a frankfurter. Safe manufacture requires a validated cooking step (core ≥70°C), rapid chilling, cold-smoking under controlled conditions, and continuous refrigeration: as a ready-to-eat meat product it is vulnerable to post-cook Listeria contamination if hygiene barriers fail.
