Kangaroos
Large herbivorous marsupials of the genus Macropus, in the Macropodidae family, all native to Australia. Australia commercially harvests three kangaroo species for meat — the red (M. rufus), eastern grey (M. giganteus), and western grey (M. fuliginosus). Harvesting is quota-managed for sustainability, and field dressing plus rapid chilling underpin meat safety all the way from the outback to the processing plant. Their grazing habits make them well adapted to arid rangelands. Regular population surveys set the quotas that keep harvesting sustainable.
