Inulases II
An alternative term for inulin fructotransferases (depolymerizing) — enzymes that clip inulin into cyclic fructose compounds rather than simple fructose. Their product, di-D-fructofuranose dianhydride (DFA III), is half as sweet as sucrose and is of interest for use in low-calorie sweeteners. The name distinguishes them from the hydrolytic inulinases (sometimes called inulases I), which release free fructose instead. Both enzyme classes unlock value from inulin-rich crops, but their different products serve different formulation goals. Research continues into food applications of their distinctive cyclic products.
