Instant cocoa
Beverage mixes of cocoa powder, usually stirred into hot milk or water to produce a cocoa drink. Sugar, milk solids, and emulsifiers are typically blended with the cocoa for instant solubility and a smooth cup. Quality hinges on fine particle size, low moisture, and protection against caking during storage. Lecithin treatment of the cocoa improves wettability, so the powder disperses instead of floating in stubborn lumps on the surface of the hot liquid. Premium versions use higher cocoa content and finer grinding for a richer cup.
