Impala
Swift-running, medium-sized, graceful antelopes (Aepyceros melampus) of African savannas; impala are hunted for their meat. Game meat from impala is lean and richly flavoured, but like all wild-harvested meat it requires proper field dressing, rapid cooling, and veterinary inspection to manage risks from parasites and contamination. Sustainable harvesting keeps both the herds and the food supply healthy, and in regions where impala are abundant they provide a major source of protein for local communities.
