Imitation crabmeat
Something that looks like crab-leg flesh but comes from marine fish flesh — typically a mild fish such as pollock. Mince is rolled into sheets and coloured to give the required appearance; the result becomes crab sticks or flaked imitation crabmeat. Compared with real crab meat, the finished product carries noticeably less cholesterol. Labelling must prevent it being mistaken for real shellfish — a matter of both honesty and allergen safety, since fish-allergic consumers must recognize what they are eating.
