Honeydew honey
Honey made from honeydew — the sweet secretion plant lice leave on trees (beech honeydew, for example) — collected by honeybees. Because it comes from insect secretions rather than flower nectar, it tends to be darker and less sweet than nectar honey, and tasters generally rank honeydew honeys below nectar honeys, though their mineral-rich character keeps loyal regional markets. Like all honeys, honeydew honey must be accurately labelled as to its origin, and its distinct composition gives it a different flavour profile that some consumers actively seek out.
