Certain members worry toxicologists, since laboratory studies tie them to mutagenicity or carcinogenicity — which is why food scientists map their formation pathways closely. Practical ways to limit them include lower cooking temperatures, avoiding heavily charred surfaces, and using marinades shown to reduce their formation, keeping exposure from home and commercial cooking as low as reasonably achievable.
