Halva is an aerated confectionery product made with crushed sesame seeds, as tahini, blended with hot sugar syrup and honey, whipped to a crumbly yet rich texture; it is also known as chalva or halawa. The term additionally covers a sweetened, flavoured traditional Indian sweetmeat prepared from carrots, pumpkins or bananas cooked with sugar, ghee and milk. Sesame halva’s quality rests on fine grinding, correct syrup temperature and thorough aeration, while its high unsaturated-fat content demands protection from rancidity. Sesame is a regulated allergen, so labelling must be explicit, and the Indian vegetable versions rely on milk-solids hygiene for safety.
