Guava purees
Sieving guava flesh, or reducing it in a blender, yields guava puree: a smooth, creamy preparation that works as a sauce on its own or as an ingredient across fruit juices, nectars, bakery products, ice cream, yoghurt and jams. Its fine texture and intense tropical aroma make it the premium form of guava for manufacturers, who heat-treat it for safety while guarding flavour. Brix and acidity are standardised so the puree behaves consistently from batch to batch and season to season.
