Grifola frondosa

Grifola frondosa, commonly known as maitake or hen-of-the-woods, is a prized edible mushroom growing in overlapping clusters at the base of oaks. Valued in Japanese cuisine for its rich, earthy flavour and firm texture, it is also sold dried and as extracts studied for immune-support properties. Cultivation now supplies most of the market, ensuring consistent quality and year-round availability. Growers control substrate, humidity and temperature for reliable flushes, and dried product is checked for correct moisture and freedom from contaminants.
