Grape juice concentrates
Winemakers and juice plants stock grape juice concentrates, the grape juices that have been concentrated by evaporating water under vacuum. They may be diluted back to reconstituted grape juices for the drinks shelf, or used in winemaking to adjust sweetness and body. Concentration cuts transport and storage costs dramatically, and frozen storage preserves quality for months. Careful evaporation protects the delicate aroma compounds that define varietal character. Reconstituted juice must meet the same standards as single-strength juice. Labels must declare reconstituted status where regulations require it.
